Veg & barley summer salad
This is a delicious and easy salad to prepare with a braai. It consists of chargrilled vegetables with barley/ lentils or quinoa. I make a lovely humus dressing with it - although a yoghurt & lime dressing
works as well.

Humus dressing:
120g(1tub) humus
125ml plain yoghurt
35ml olive oil
35ml lemon juice
salt & pepper

700ml cooked barley, lentils or quinoa.
Handfull rocket and basil
​
Chargrill the following with olive oil :
Courgette, aubergine, butternut( or sweet potato), asparagus & mushroom. Stir barley and rocket & basil in. Add hummus on top. Enjoy!
